Let’s eat Spinach

Today, March 26, is National Spinach Day. Do I even need to tell you the benefits of spinach? Probably not but here’s a refresher: It is low in calories and carbs. High in fiber, vitamins and minerals. Health benefits: improved eye health, stronger bones, improved cardiovascular health and better glucose control.

Spinach Cream Cheese Appetizer

  • 1 can of crescent rolls (depending on how many people you are serving – you may want to have 2 cans)
  • 1 bag of frozen chopped spinach ( you can use fresh spinach too)
  • 1 8 oz block of cream cheese
  • salt
  • 1 small can of chopped mushrooms
  • 1 small can/jar of artichoke hearts – chopped (this ingredient is optional)

I use a regular muffin pan but if you wanted smaller bite size servings, you could use a mini muffin pan.

  1. Preheat oven to 350 degrees, grease the muffin pan
  2. roll out the crescent rolls – cut each triangle in half
  3. put each piece of crescent rolls into the muffin tins. make sure the crescent rolls covers the sides and bottom of each
  4. cook the spinach in a pot and add mushrooms and artichokes hearts if desired. You want the mushrooms and artichokes chopped into small pieces.
  5. Add in the cream cheese until mixed well and melted
  6. add salt
  7. Take a spoonful of the mixture and place in the muffin tins
  8. Cook for approx. 20 to 25 minutes until the crescent rolls are baked.

Be Creative – you can add onions to the spinach mixture when cooking, you can add some cheddar or any cheese on top if desired.
