
Sometimes we let our bananas get too ripe, then no one will eat them. So, make banana bread! Everyone will eat the banana bread. Well, except for those trying to eat low carb, like me. I baked the banana bread so I couldn’t waste the bananas but knew I couldn’t eat it. My husband loves it and even added some Amish apple butter on his slices. I did make what I would consider a healthier version than the traditional banana bread recipe.
Banana Bread Recipe
Ingredients:
3 riped bananas, mashed
1/3 cup melted coconut oil or olive oil’
1/2 cup honey or pure maple syrup ( I used pure maple with no preservatives)
2 eggs
1/4 cup milk (I used almond milk)
1 tsp vanilla extract
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1 3/4 cups whole wheat flour
Optional add ins:
1/2 cup chopped walnuts or pecans
1/3 cup dark chocolate chips
2 tbsp flaxseed meal or chia seeds for extra fiber
Instructions:
- Preheat oven to 325 degrees. Grease a 9×5-inch loaf pan or line with parchment paper.
- In a large bowl, whisk together masked bananas, oil, honey, eggs, milk, and vanilla.
- Sprinkle in baking soda, salt,cinnamon, and stir to combine.
- Gently stir in the whole wheat flour until just combined -don[t ovemix.
- Fold in any add-ins if using.
- Pour the batter into the loaf pan and smooth the top.
- Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for 10 minutes before transferring to a wire rack.
