Chicken Tortilla Soup

Ingredients: Chicken breasts, chicken broth, black beans, corn, diced tomatoes, onion, garlic, chili powder, cumin, salt and pepper (the amounts of each ingredient will be determined by how many you are cooking for and by your taste preference.)

Directions: Place all ingredients in slow cooker. Cook on low for 6-8 hours. Shred chicken before serving.

Beef Stroganoff

Ingredients: Beef stew meat, mushrooms, onions, garlic, beef broth, sour cream, Worcestershire Sauce, egg noodles, salt and pepper. ( the amounts of each ingredient will be determined by how many you are cooking for and by your taste preference.)

Directions: Add all ingredients except sour cream and noodles to slow cooker. Cook on low for 7-8 hours. Stir in sour cream before serving with noodles.

One-Pot Shrimp Scampi

Ingredients:

1 lb shrimp, peeled and deveined

1 lb Linguine

4 cloves garlic, minced

1/2 tsp red pepper flakes

4 cups chicken broth

1 cup dry white wine

1/4 cup lemon juice

1/4 cup butter

2 tbsp olive oil

Salt and pepper to taste

Fresh parsley for garnish – (optional)

Instructions:

  1. Heat Olive oil and butter in a large pot over medium heat. Add garlic and red pepper flakes, and saute’ until fragrant.
  2. Stir in chicken broth, white wine, lemon juice, and linguine. Bring to a boil.
  3. Reduce heat to medium and cook until pasta is al dente and most of the liquid is absorbed, about 10 minutes.
  4. Add shrimp and cook for an additional 3-5 minutes, or until shrimp is cooked through.
  5. Season with salt and pepper to taste. Garnish with fresh parsely before serving.
