It’s time to visit the local apple orchards and purchase all varieties of apples, fried pies, apple jelly, and I can’t forget about caramel apples and candied apples. I can smell that fresh warm apple pie smell and taste the apple cider now. If you don’t have apple orchards near you, look for the local farmer’s market or go to a Fall festival. Local festivals are sure to have some sort of apple pies or cakes.
My mother makes a delicious apple cake that I want to share with you. She shared the recipe with me a few years ago and it comes out moist and delicious every time. I make it using a bundt cake pan and pour the delicious icing over it.
Mom’s Apple Cake
1 1/2 cups of vegetable oil
2 cups sugar
3 eggs
3 cups of all purpose flour
1 teaspoon of baking soda
2 teaspoons of vanilla
3 large apples – chopped up into small pieces
Icing for the Apple Cake:
1 stick of butter
1/2 cup of brown sugar
2 tablespoons of milk
Combine the vegetable oil, sugar and eggs and beat for 3 minutes. Then add in the 3 cups of all purpose flour, the baking soda, vanilla and the chopped up apples. Mix it all together and sprinkle in some cinnamon. Pour in a bundt pan. Cook in a preheated oven at 325 degrees for 1 hour and 20 minutes.
When the cake has cooked, it is time to make the icing. Combine 1 sick of butter, brown sugar and milk. Heat to boiling. Then pour in 2 cups of confectioner sugar, stir well and take it off the heat. pour over the cake.
