Hot July!

It’s hot everywhere this month. Let’s cool down with some cool summer salads. This salad seems to have a variety of ingredients depending on what you want to add. I see similar ones on salad bars at restaurants. The one listed below is a low carb version of broccoli salad. If you don’t want it to be low carb, add some more ingredients, get creative.

Broccoli Salad

Ingredients:

4 to 6 cups of fresh broccoli or 1 bag of cut up broccoli

1 onion – yellow, white or red

6 pieces of cooked bacon

1/4 cup of ranch

1/2 cup of mayonnaise

1 cup of shredded cheddar cheese

1 packet of Stevia or sweetener of choice

Chop up the broccoli in bite size pieces. crumble the bacon into pieces. Chop up onion into small pieces. Mix all ingredients together and chill in the refrigerator. Serve and Enjoy!

You can also add olives and sunflower seed kernels.
