One-Pot Chicken Pasta

Servings: 4

Ingredients: 

1 lb boneless, skinless chicken breast or thighs, diced or sliced

1 tbsp olive oil or butter

3 garlic cloves, minced

1 small onion, finely chopped

2 cups chicken broth

1 cup milk or half and half

8 oz uncooked pasta (your choice of type)

1/2 tsp Italian seasoning

Salt and pepper, to taste

1 cup shredded mozzarella or Parmesan cheese

optional 1-2 cups spinach, cherry tomatoes, or cooked broccoli for extra veggies

Instructions:

  1. In a large pot or deep skillet, heat olive oil over medium-high heat. Add diced chicken, season with salt, pepper, and Italian seasoning.  Cook 5-6 minutes until browned and cooked through.  Remove and set aside.
  2. In the same pot, add onion and garlic.  Saute’ 2-3 minutes until soft.
  3. Pour in chicken broth and milk.  Stir in the uncooked pasta.  Bring to a boil, then reduce heat to simmer.  Cover and cook for 10-12 minutes, stirring occasionally, until pasta is al dente and most liquid is absorbed.
  4. Stir the cooked chicken back in.  Add cheese and optional veggies.  Stir until creamy and well combined.  Let it sit a couple of minutes to thicken.
  5. Garnish with extra cheese or fresh herbs if you would like.
