One-Pot Chicken Pasta

Ingredients:
1 lb boneless, skinless chicken breast or thighs, diced or sliced
1 tbsp olive oil or butter
3 garlic cloves, minced
1 small onion, finely chopped
2 cups chicken broth
1 cup milk or half and half
8 oz uncooked pasta (your choice of type)
1/2 tsp Italian seasoning
Salt and pepper, to taste
1 cup shredded mozzarella or Parmesan cheese
optional 1-2 cups spinach, cherry tomatoes, or cooked broccoli for extra veggies
Instructions:
- In a large pot or deep skillet, heat olive oil over medium-high heat. Add diced chicken, season with salt, pepper, and Italian seasoning. Cook 5-6 minutes until browned and cooked through. Remove and set aside.
- In the same pot, add onion and garlic. Saute’ 2-3 minutes until soft.
- Pour in chicken broth and milk. Stir in the uncooked pasta. Bring to a boil, then reduce heat to simmer. Cover and cook for 10-12 minutes, stirring occasionally, until pasta is al dente and most liquid is absorbed.
- Stir the cooked chicken back in. Add cheese and optional veggies. Stir until creamy and well combined. Let it sit a couple of minutes to thicken.
- Garnish with extra cheese or fresh herbs if you would like.
